Nicola Palmer , formerly Head Chef and Restaurant Manager of nearby Skillogalee Winery Restaurant, is General Manager of Penobscot Farm and Executive Chef of the Watervale Hotel. Nicola, a qualified Jeweler,  has also managed the development and led the interior and exterior design.



Warrick Duthy is part owner and a Director of Kilikanoon Wines in the Clare Valley. He also Chairs the Clare Valley Alliance, the peak body for Clare Valley tourism, and represents the interests of Vestey Group in Australia which sees him advising The Lane in the Adelaide Hills and Delatite in Mansfield, Victoria.

Taste Nature

“The shared plate menu I’ve designed is inspired by wonderful street food and diverse culinary techniques of the world. During my travels street food has struck me as some of the most authentic food and cooking of a country. Whilst designed to be eaten in the front bar or along the verandah, we are happy for people to eat whatever they want, where they feel most comfortable in the Hotel. We are taking great pleasure in recreating amazing dishes of the world using the spectacular range of produce we have grown at Penobscot Farm or sourced in our region. For those who can not decide what they want to eat, you can leave it to me.”
