NICOLA PALMER

CREATIVE LICENSEE & EXECUTIVE CHEF​​

Nicola Palmer grew up on her parents Skillogalee Winery and after choosing a career as a Jeweler, returned to the family business to eventually become Head Chef and Restaurant Manager. Now she is General Manager of Penobscot Farm and the Watervale General Store as well as Executive Chef of the Watervale Hotel. Nicola managed the Hotel renovation and led the interior and exterior design. In 2022 Nicola was named Hospitality Champion at the Australian Women in Business Awards, and the South Australian Chef of the Year by the Restaurant and Catering Association. She was a finalist in the 2023 SA Woman of the Year. 

WARRICK DUTHY

POETIC LICENSEE & SOMMELIER​

Warrick Duthy is a liquor industry veteran with a strong resume in management and marketing across beer wine and spirits. He has led companies including Seppelt Wines, United Distillers / Diageo, Petaluma Ltd and Petaluma as well as managing business development for Allied Domecq world wines, and sitting on various boards including Seppeltsfield, The Lane and Delatite. In 2024 Warrick was inducted into the Clare Valley Winemakers Hall of Fame as Regional Ambassador for his work promoting the region for a decade, but most importantly at the Watervale Hotel 

Taste Nature

“The shared plate menu I’ve designed is inspired by wonderful street food and diverse culinary techniques of the world. During my travels street food has struck me as some of the most authentic food and cooking of a country. Whilst designed to be eaten in the front bar or along the verandah, we are happy for people to eat whatever they want, where they feel most comfortable in the Hotel. We are taking great pleasure in recreating amazing dishes of the world using the spectacular range of produce we have grown at Penobscot Farm or sourced in our region. For those who can not decide what they want to eat, you can leave it to me.”
