Penobscot Restaurant – The Chef’s Table

Penobscot Restaurant is a ten-seat, degustation-only restaurant located in the kitchen of the Watervale Hotel, Clare Valley, South Australia. Guests sit at the Chef’s Table where they can observe the inner workings of the kitchen and engage with the Chef’s.
Penobscot Restaurant is where Penobscot Farm produce is enhanced and enriched to create an exceptional fine dining experience. Nine individually plated courses including amuse busche and palate cleanser hand crafted and beautifully presented.
Fresh and preserved produce sourced from Penobscot Farm come together to create flavoursome dishes.
All of the meats sourced for Penobscot Restaurant are selected on ethical and sustainability criteria. Free range, wild caught, grass fed, sustainably farmed or regeneratively reared.
Chef Nicola Palmer has brought her home, her farm, into the Watervale Hotel to create Penobscot Restaurant. Here she crafts authentic dishes with powerful fresh flavours but delicate touch. Nicola and her team pick daily for the ever-changing menu.
Penobscot Restaurant offers two services per day, at 12 noon and 6 pm at $150 / head.
Guests can choose to match their degustation with a wine, gin, or mocktail match.
- Penobscot Restaurant exclusively serves the best of Clare Valley wines selected to demonstrate the region’s diversity. $100 / head.
- The mocktail match uses fruit and herbs picked from Penobscot Farm as juices, teas, vinegars and syrups to mimic the characteristics of wine. $80 / head.
- Only Clare Valley Gins are used for the matching gins. We have selected a Clare Valley Gin to add to each of the mocktails. $125 / head.
Guests in groups of four or more can choose to have their Penobscot Degustation experience in a private room. There are rooms that seat up to 6, up to 10 and up to 22 in the Watervale Hotel’s Hell Hole.
Guests with dogs can also enjoy the Penobscot Restaurant dining experience in the Watervale Hotel Beer Garden.
Guests dining at either sitting have the option to be guided on a 90 minute Penobscot Farm Tour at 4 pm. The tour includes education on Clare Valley geology, geography, history, as well as practical application of permaculture design, organic and biodynamic farming and regenerative agriculture. $100 / head.
Cooking Masterclasses.
A full day immersive cooking masterclass for small groups of six to ten. Starting in the Hotel for morning tea and tour. A tour of our organic, biodynamic, permaculture farm to pick produce then back to the kitchen to prepare a late lunch. Morning tea and matched wines with lunch included.
The Cooking Masterclasses are available 9am – 4pm Monday to Fridays. Minimum 6 guests to 10 person Max
